The Story of our ALTO MPHS

Only four winemakers have crafted wines at the Alto Wine Estate in the Stellenbosch Winelands in its eight decade history.

These four winemakers – Manie Malan, Piet du Toit, Hempies du Toit and Schalk van der Westhuizen – gathered in late 2010 at the idyllic estate to launch the much anticipated Alto MPHS 2007 which takes its name from their initials. The powerfully sleek micro-cuvée was created to honour the extraordinary soils and location of this Stellenbosch Winelands red wine estate. A mere 1 800 litres of the 67/33 blend of Cabernet Franc and Cabernet Sauvignon was aged for two years in wood and then left to mature in the bottle for another year before release.

Of the Alto MPHS, current winemaker, Schalk van der Westhuizen had this to say,

“When you pick at such ripeness, it is always a challenge to achieve a finessed profile but I think we have succeeded. The wine is ready for enjoyment now but it has the structure to age for a decade at least.”

Beef fillet with blue cheese and pesto cream

ALTOHere’s a delicious beef fillet with blue cheese and pesto cream recipe to try this weekend. Excellent for entertaining and with a glass of ALTO Shiraz.

 Ingredients: 

  • 100 g blue cheese
  •  50 ml lemon juice
  • 200 ml cream
  • 3 Tablespoons basil pesto
  • 10 ml oreganum
  • 10 ml majoram
  • 100 ml Olive oil
  • 10 ml rosemary
  • 3 garlic cloves, crushed
  • 1.50 kg beef

 

Method:

Whisk the olive oil, lemon juice, garlic and herbs and pour the mixture over the fillet of beef. Refrigerate overnight to marinate.
Place the meat in a casserole dish and bake, covered, in a preheated oven at 180 degrees C for 20 mins, or until done to your liking.
Slice the fillet into portions and sprinkle with the crumbled blue cheese. Place under a hot grill until the cheese has browned.
Sauce: Heat the pesto and cream over a medium heat, taking care not to allow the mixture to boil. Drizzle the sauce over the fillet. Serve with sautéed vegetables and potato wedges.

Recommended wine: Try the ALTO Shiraz with this dish.
